餐厅位于前滩太古里“石区(Stone)”的沿街二层,是一家以烘培为特色的全时段休闲餐饮连锁品牌。这也是继乌鲁木齐中路PAOPAO Deli店之后,我们接受委托设计的第二家门店,是一家全新概念店。
Located on the second floor along the street in the Stone Area of Pudong Taikooli, PAOPAO Marché is an all-day brunch brand featuring baking restaurant. This is the second store we have been commissioned to design after the PAOPAO Deli store on Urumqi Middle Road, and it is a brand new concept store.

前滩Marché店铺选址同时拥有面向城市和商场内部的两个展示界面。尽管位于商场二层一处边缘空间,但交通便利靠近直达扶梯,从街道外部即可快速到达。而如何在有限的空间里,满足烘焙、轻餐、酒水、产品售卖等多元类型的复合功能,是与Deli店温馨舒适的精选理念完全不同的。
The location of PAOPAO Marché has two display interfaces facing both the city and the mall. Although located on the second floor, it is close to a direct escalator and is easily accessible from the street. How to satisfy multiple types of composite functions such as bakery, light meals, drinks, product sales, etc. in a limited space is a new question for us. This concept is completely different from the Deli one.

我们顺应Marché店的理念自然联想到了集市——聚集进行的商品交易活动形式,而Marché法语正意为市场,空间设计便以此为灵感,希望这家门店不止于面包烘焙,更是作为一个复合型的空间为这片商业区提供多元体验。
The concept of Marché was inspired by the idea of ‘bazaar’ – a gathering of people to trade goods. Meanwhile, the French word Marché means market, so the space design was inspired by this idea. We hope the store would not only serve for the bakery part, but a composite space to provide a multifaceted experience for local commercial area.

设计概念从五感出发,探索人的视、听、嗅、味、触与空间的关系,以及复合功能的多元融合。原本的场地空间条件并不理想,虽拥有很长的对外界面,但内部空间呈L型,场地既有管道设备自然将空间分割成后厨区和前场餐厅。空间中有多根立柱且位于中央,占据视觉焦点,主体空间的开敞和进深有限。于是我们将厨房后勤功能全部放置于L型靠后门一端,主入口面向商场端。
Inspired by the five senses, the design concept starts from exploring the relationship between human sight, hearing, smell, taste, touch and the space, as well as the multifunctional integration of compound functions. The original spatial conditions of the site were not ideal, with a long external interface but an L-shaped internal space, which was naturally divided into a back area and a front restaurant by the existing plumbing fixtures on the site. The space was dominated by a number of columns in the center of the space, which dominated the visual focus and limited the opening and depth of the main space. Therefore, we placed kitchen at the back door end of the L-shape, with the main entrance facing the mall.

入口正对的中心吧台是整个空间的视觉核心区,将原空间中央的柱子融合货架与消防的功能,消解弱化柱子的单一性。非封闭的长界面设计则自然串联了烘焙展示、点单售卖、酒水吧台等功能。进店后流线在此自然划分,右边通过展示的面包自然吸引人走向点单区。吧台对面的墙柜原本在设计中作为储物和基础商品的展示,后期随着越来越多合作的品牌加入,整排柜子成为多元共创的展示,与吧台相呼应构成了室内的集市区,丰富又热闹。
The central bar facing the entrance is the visual core of the whole space, and the column in the center of the original space integrates the functions of shelves and hydrant, dissolving the singularity of the column. The non-enclosed long interface design naturally connects the functions of display, ordering and bar. After entering the store, the flow line is naturally divided here, and the bread displayed on the right side naturally attracts people to the ordering. The cabinets opposite the bar were originally designed as storage and basic goods display. After opening, as more and more collaborative brands joined in, the whole row of cabinets became a display of diverse co-creation, echoing with the bar to form an indoor bazaar area, rich and lively.

逛完集市后可选择落座品尝,经过后厨区,备餐的香味则会激活嗅觉。原本业主希望后厨区全部开放,不设边界,打造现制现售的极致现场感。最终综合考量,我们将长桌区设计为工作坊空间,以一圈帘子作为软隔断,将15%的面积作为堂食和活动两用。
After the market, you can choose to take a seat and taste, while passing through the kitchen, the sense of smell will be activated. Originally, the owner wanted to completely open the kitchen with no boundaries, as to create a feeling of made and selling on site. In the end, we designed the long table area as a workshop space, with a circle of curtains as a soft partition, and used 15% of the area for both dine-in and events.

随着功能动态变化,空间多元利用的同时满足了品牌不定期快闪活动的需求,依然提供了集市的体验感,将互动社交的属性发挥极致,对于餐饮门店也是种全新尝试。
With the dynamic change of function, the diversified utilization of space meets the demand of occasional pop-up events, and still provides the sense of bazaar experience. The attribute of interactive socialization is also a new attempt for restaurant.

柱子后面的另一半转角为酒水吧台区,从热闹的集市区和工作坊长桌区,进入相对安静的氛围。沿窗餐区可看到一处小花园,店铺的入口落座区呼应了外部环境,打造的室内植物角,一如在集市户外就餐。
The other half of the corner behind the column is the wine bar, which is a step away from the bustling market and workshop area into a relatively quiet atmosphere. A small garden can be seen along the window dining area, and the store’s entrance creating an indoor plant corner to echo the exterior.

整个空间运用真实的材料,水磨石的地面延伸呼应太古里“石区”概念。中心吧台的石材打造户外感,与不规则的吊顶“雨棚”相结合,共同支撑起整个集市中心。
Natural materials are used throughout the space, and the terrazzo flooring echoes the concept of Taikooli’s ‘stone district’. The stone of the center bar creates a sense of the outdoors, which combined with the irregular ceiling ‘canopy’ to support the entire market center.

左右分隔又串联的流线为人们提供多种选择,既可单独选购产品,即买即走,亦可坐下品尝,还可以在长桌区的工作坊或快闪活动中随机选择围观或加入。
The left-right separated flow offers a variety of options for people, no matter shopping individually, buy and go, or sit for a tasting. Even randomly choosing to join the pop-up events in the long table area.

吧台区的视觉,就餐区的味觉,制作烘焙的嗅觉,工作坊社交的听觉,挑选商品的触觉,将多元复合的功能在五感中串联融合,最终在这家全时段的餐饮店创造了逛集市的闲适与自由感。
The sight of bar, the taste of dining, the smell of baking, the hearing of workshop, and the touch of picking up goods, connect and blend multiple composite functions within the five senses, and ultimately create a sense of leisure and freedom of strolling through a market in this all-day dining restaurant.
