“Seeing the whole process of food preparation” is the customer experience we hope to achieve this time.
“初饭”品牌的核心是新鲜食材、健康餐。“看到食物制作的全过程”会让空间体验与品牌定位更加合拍。
The core of “C’FINE” brand is “fresh ingredients and healthy meals”. So “Seeing the whole pro-cess of food preparation” will make the spatial experience and the brand positioning matches each other.
我们取消了“后厨”,而在平面中的核心位置放置了三个开放的“小岛”——“咖啡岛”、“热餐岛”和“冷餐岛”。围绕着这三个小岛布置了所有的客座。这样无论客人在哪里落座,都会在进餐的同时看到新鲜的食材、闪亮的厨具和设备、忙碌的咖啡师和料理师。
Instead of the “back kitchen”, we place three open “islands” – the “coffee island”, the “hot meal island” and the “salad island” at the core of the plan. All the guest-tables are arranged around these three islands. In this way, no matter where a guest sit, he or she will see fresh ingredients, shiny kitchen utensils and equipment, busy working baristas and chefs at the same time.
三个小岛的地面高度比客座区降低了15cm,这样顾客在站立时能更好的看清厨房的格局和加工台面上的食材–鲜榨果汁、沙拉、披萨和拌饭的加工过程都近在咫尺。而落座之后餐桌的高度与厨房制作台的高度完全齐平,会带来一种“边做边吃”的新鲜体验。
The ground height of the three islands is 15cm lower than that of the guest area, so that guests can better see the layout of the kitchen and the food on the production table – fresh juice, salad and pizza. After sitting down, a guest will find that the height of the dining-table is just at the same height with the kitchen production table, which will bring a fresh experience of “eating with cooking”.
为了达成完全开放的“小岛”式厨房布局,我们深度参与了厨房设计以及收送洗动线的规划,将每一个员工的工作体验视作与顾客的体验同等重要。如此顾客才能被“主人”充满幸福感的工作状态所感染。
In order to achieve a fully open “island” kitchen layout, we have deeply participated in the kitchen de-sign and the planning of the collection and delivery washing line, and regard the work experience of each employee as equally important as the experience of customers. In this way, customers can be in-fected by the “master”’s happy working state.
这家“初饭”餐厅所在的苏州圆融时代广场,是繁华的闹市中心。场地北侧面向的是城市道路和几栋办公建筑,南侧是热闹的商业内街。我们在北、南、东南、三个方向各设置了一个出入口。经过改造的全通透的玻璃外墙,使室内空间更容易被行人的视野捕捉到。不同时段的餐品特质决定了三个小岛的位置。清晨,上班族们可以从北入口外发现咖啡岛;午间或傍晚,南侧商业街的游客则会因为发现冷餐岛和热餐岛而走进餐厅。
Suzhou Yuanrong Times Square, where this “ C’FINE “ restaurant is located, is the bustling commer-cial center. The north side of the site faces the city road and several office buildings, and the south side is the inner street of the commercial center. We set up three entrances to the north, south, and south-east. The fully transparent glass facade makes the interior space easier to be captured by pedestrians. The location of the three islands is determined by the characteristics of the food preparing for different times. In the morning, office workers can find the “coffee island” from the north entrance; while in the dinner time, tourists in the south commercial street will enter the restaurant because of finding the “salad island “and the “hot meal island”.
